Vital wheat gluten powder, also known as active gluten powder, has a protein content of over 80% and a relatively complete amino acid composition. It is a nutritious, cost-effective plant-based protein source. Gluten powder is mainly composed of glutenin, which has a smaller molecular weight, is spherical and has good extensibility, and glutenin, which has a larger molecular weight, is fibrous and has strong elasticity. When gluten absorbs water, it forms wet gluten with a network structure, which has good viscoelasticity, extensibility, thermal setting property, emulsification property, and film formability. Traditional products such as gluten, baked gluten, moldy gluten, old meat, vegetarian sausages, vegetarian chicken, vegetarian duck, and oil gluten are simple applications of the above properties.

 

Application

1.The most fundamental use of vital wheat gluten is to adjust the protein content of flour. In many places, flour producers add vital wheat gluten to low-gluten flour to meet the requirements of bread flour instead of mixing expensive, imported high-gluten flour.

2.Another major use of vital wheat gluten is as a vegetarian food alternative to meat, as well as in the production of artificial expensive meats, such as analogues of seafood and crabs

3.Gluten powder, when used alone or in combination with soy protein, can partially replace the expensive sodium caseinate, significantly reducing the production cost of cheese. Vital wheat gluten is also used to enhance the surface strength of pizza, provide a hard crust and a refreshing texture, make the outer layer crispy, increase chewiness, and reduce the transfer of water from the sauce to the interior of the pizza.

4.Vital wheat gluten is also used in the preparation of soy sauce and in the manufacture of monosodium glutamate [4]. The high glutamine content of vital wheat gluten makes it an ideal primary material for manufacturing the latter. Soy sauce made from vital wheat gluten has a lighter color, a slower Browning rate, an excellent flavor and a good consistency compared with traditional soy sauce.

5.Vital wheat gluten powder has a high protein content and a relatively complete amino acid composition. In the feed industry, its excellent protein source can be utilized as feed for high-end animals and pets

6.Recent studies have found that some food protein peptide chains contain bioactive peptides [6]. They are released during the process of protein degradation and play a role in metabolic regulation.
