Xylitol is an organic compound with the formula C5H12O5, white crystal, soluble in water. It is a natural sweetener and is the sweetest known sugar alcohol, as sweet as table sugar. In nature, xylitol widely exists in various fruits, vegetables, cereals, but the content is very low. It is often used as a sugar-free food additive. It is also an intermediate in the normal sugar metabolism of animals.
Application:
According to China's "Health standards for the use of food additives" (GB2760-1996), xylitol can replace sugar according to the normal production needs for candy, pastries, beverages. It says on the label that it's for diabetics. In actual production, xylitol can be used as sweetener and wetting agent. The reference amount used in food was: chocolate, 43%; Chewing gum, 64%; Jam, jelly, 40%; Ketchup, 50%. Xylitol can also be used in condensed milk, toffee, fudge and so on. When used in pastry, no Browning occurs. A small amount of fructose can be added when making pastries that require Browning. Xylitol can inhibit the growth and fermentation activity of yeast, so it is not suitable for fermented food.
